More than 186 species of fish are found in the Apalachicola Bay estuarine system alone; flounder, redfish, red snapper, mahi-mahi, grouper, cobia, amberjack, Spanish mackerel and wahoo are a sampling of fresh-caught fish frequently found on local menus.

In addition to serving seafood fresh from local markets, many Franklin county chefs also patronize local and regional dairies, beekeepers, produce and livestock farmers to provide the freshest in cheeses, honey, coffee, organic produce and meats for their patrons.
